Freckled Foodie's Breakfast Truck

What are three of the things I love most? Breakfast, the beach, and showing people that eating healthy does not have to suck. So, why not combine all three? Two weekends ago I found myself taking an oh so favorite barefoot stroll from my parent's house down the block to the beach as I was stopped by two young kids and asked if I wanted a glass of lemonade. Walking with my cousin, who has a life rule of never passing a lemonade stand without purchasing something, and the fact that they had those blueberry mini muffins that defined my childhood but I haven't seen in forever, I was searching my pockets for money. As we walked away with a cup of lemonade in tow, I jokingly said "wouldn't it be funny if I had a Freckled Foodie stand?". We laughed for a second and, as soon as we stepped on to the beach, the scent of the ocean quickly took focus and swept the food stand thought away. It wasn't until the next day when I returned to NYC and began re-focusing on Freckled Foodie business that I realized how how fun it would be to make this idea a reality. So that is exactly what I did.

Within 24 hours I had all of the ingredients, packaging, business cards, and necessary accessories rush ordered to my parent's house and was prepared for the upcoming weekend. It was official, I was going to have a food stand. Now to the logistics... As I'm continuing to try to gain traction for my blog / instagram and find new potential clients, I figured this would be a great way to spread the word. Plus, I am always trying to encourage healthy eating habits and steer people to not only eat breakfast, but to also pick up a vegetable and fruit filled smoothie over a doughnut. What better way to do all of these things than hand out free food? After hours spent in my kitchen preparing the meals, labeling the cups, making one too many smoothies, printing out flyers, and trying to clean up the mess before my mom killed me, it was time to load up the car and get out there. If you had told me a year ago that I would be standing outside my car offering breakfast to people that walked by and starting up conversations with strangers, I would have laughed in your face. But that is exactly what I did. I met a ton of incredible people that all learned more about healthy breakfast options, encouraged my side venture, and reminded me of why I put so much work in to Freckled Foodie. The highlight of my day? I met someone who had followed my account prior to coming to the stand, who comically I already knew but because I rarely show my face on this account she was unaware, and successfully took my first "fan photo" (hi Lauren I told you you'd be getting a shout out in this post!). The two hours flew by and I returned back to my house feeling high on life and ready to hit the street again next weekend. Seven days later and there I was again handing out free breakfasts to everyone walking by, including some returning customers.

Continuing to meet so many great people with so many different stories has not only reminded me of why I love this so much, but also sparked ideas and opportunities I never could have imagined. One being the fact that this weekend I will now be moving my "truck" to a stand in the center of town. I am pleased to announce that THIS SUNDAY 07/30 I will be selling my breakfasts on the front porch of Del Mar East from 9:00AM until supplies last! Thanks to the incredible owner, Wendy, who is so supportive of my Freckled Foodie venture and willing to provide opportunity to local small business owners.Check out some photos from the past two weekends below! And a special thanks to Katie at Nuttzo who provided me with jars of peanut butter for the smoothies and free packets of the 2GO to hand out. Thank you!!Menu items have included:

  • Yogurt parfaits (banana peanut butter / blueberry walnut / peach) with Chobani plain greek yogurt, chia seed pudding, and Purely Elizabeth granola
