Grilled Vegetable & Steak Summer Salad

The grill and I have an extremely long and historic love affair. From a very young age, I remember my dad grilling every single thing possible. The scent of the smoke and that char on whatever he was cooking is one of my favorite memories of childhood. Once I became old enough to cook, I was infatuated with the grill and mastering its ability to make every single ingredient produce more flavor than any other available cooking method. Seriously – why does everything taste better when cooked on a grill!? So, after many of nights watching my dad master the method, I one day decided it was my time to try; and the rest was history. While it may seem intimidating at first, I promise it is probably one of the easiest cooking gadgets out there. It does all the work for you! Although grilling is definitely not exclusive to summertime, this is one of my favorite quick and easy meals to throw together for a summer lunch or dinner. Say goodbye to lame salads and hello to flavor!

Ingredients (serves 2):

  • Steak (1 filet)

  • Corn ear (1)

  • Avocado (1)

  • Bell pepper (1)

  • Zucchini (1)

  • Romaine (1 head)

  • Avocado oil

  • Salt

  • Pepper

Directions:

  1. Wash and prepare the vegetables:

    1. Cut the head of romaine in half lengthwise

    2. Halve the bell pepper

    3. Cut the zucchini in to ½ inch strips

    4. Halve and de-pit the avocado

    5. Light the grill, turn it on to high, and close in order for it to heat

    6. Season all of the vegetables with avocado oil, salt, and pepper

    7. Pat dry the steak and season with kosher salt and pepper

    8. Once the grill has gotten hot enough (there should be a thermometer on the outside – have it reach ~ 450 degrees), place the vegetables and steak on the grill

    9. Lower the flame to medium heat, close the grill, and do not open for ~5-7 minutes

    10. Once you open the grill:

      1. Remove the avocado and romaine

      2. Flip the other vegetables

      3. Check on the steak

        1. The amount of time you spend cooking the steak will depend on your preference of meat, but allow it to almost fully cook on one side getting a nice char

        2. When the steak is almost cooked through, flip it once and allow to finish cooking on the other side

        3. Remove the vegetables and steak from the grill and allow the steak to rest for ~10 minutes

        4. Slice the steak, plate all together, and serve hot!
