One Sheet Mediterranean Halibut Dinner

As you know by now, I am all about easy, quick, healthy, and delicious dinners. When I was working in the corporate world and would get home after a day spent in the office, laboring over a dinner and then cleaning (what felt like a thousand) dishes was the last thing I wanted to do. While I no longer feel that way, I am here to help you. So, what is better than a dinner that only dirties one dish in the cooking process? I’d say just about nothing. But, to make this beauty even more incredible, she is filled with flavor and one of the lighter meals I’ve ever felt truly satisfied and full from. A triple win and your new go-to “I just got home from work but am having some girlfriends over from dinner and would rather eat McDonalds than have to spend time cooking in the kitchen” meal.

Ingredients (serves 2):

  • Halibut (2 filets)

  • Zucchini (1)

  • Red bell pepper (1)

  • Eggplant (1)

  • Grape tomatoes (1 handful)

  • Olives (1 handful)

  • Lemon (1)

  • Avocado oil

  • Red pepper flakes

  • Salt & pepper

Directions:

  1. Prepare the vegetables:

    1. Half the zucchini and the eggplant and then dice into ¼ inch pieces

    2. Cut the bell pepper into ¼ inch slivers

  2. Place the zucchini, eggplant, bell pepper, grape tomatoes, and olives on a parchment lined baking sheet

  3. Toss the vegetables with avocado oil, the juice of ½ lemon, red pepper flakes, and salt & pepper

  4. Place the vegetables in the oven at 425 degrees for ~15 minutes

  5. Remove the vegetables from the oven and place the halibut filets on top

  6. Season the halibut with the juice of ½ lemon, red pepper flakes, and salt & pepper

  7. Place the baking sheet back in the oven at 425 degrees and cook for ~5 minutes

  8. Place the oven on high broil and cook the fish & vegetables for ~5 minutes, or until the fish is cooked to your preference

  9. Remove from the oven and enjoy warm!
