Gluten Free Low FODMAP Meatloaf

I recently was on a walk with my friend catching up on life and discussing potential new recipe ideas when she turned to me out of the blue and said, “I’ve been dying for a simple meatloaf recipe.” Although it was something I never really had considered creating, nor something I grew up eating, I couldn’t get the idea out of my mind for the rest of the day. When deciding what to cook for dinner it became a very easy decision: meatloaf, duh. I accepted the challenge (that my friend was unaware she was putting on me) and questioned why the heck I had never made meatloaf before. This insanely easy recipe will definitely be a staple for every single cold and cozy night this year.

Ingredients (serves 4)

• Broccoli (5 florets)
• Carrots (3)
• Flax egg (1) - 1 tablespoons of ground flaxseed & 3 tablespoons of water. Or replace with 1 regular egg
• Ground beef (1lb)
• Almond flour (2 tablespoons)
• Tomato puree (1 cup)
• Tomato paste (2 tablespoon)
• Sage
• Thyme
• Rosemary
• Salt & Pepper

Directions:

1. Place the carrots and the broccoli heads in the food processor and pulse until very finely chopped
2. If using, prepare the flax egg: combine 1 tablespoon of ground flaxseed with
3. tablespoons of water and place in the fridge for ~5 minutes. In a bowl, combine the chopped broccoli and carrots, flax (or regular) egg, 1 tblspoon of tomato paste, ½ cup of tomato puree, ground beef, sage, thyme, rosemary, and salt & pepper
4. Mix together and then place in a loaf baking dish
5. Top the loaf with a mixture of the ½ cup of tomato puree and 1 tblspoon of tomato paste
6. Bake in the oven at 425 for ~40 minutes
7. Broil on high for 5 minutes
8. Remove and enjoy hot!
